How healthy is cheese?

We are brought up on mother's milk because milk contains everything we need to sustain life - calcium for the development of bones and prevention of osteoporisis, essential minerals and vitamins and fats to help us grow.  When we decide we want to loose weight we need to consider cutting back on sugars and fats, particularly saturated fats.  Cheese tends to be one of the first things we cut out or cut down on, yet many people find, even by doing without their favourite cheese that there is little change in their weight.  Why?
